Kale is my favorite veggie. Up to about a year ago, I would have put it in the collard – mustard green category believing it must be cooked to be any good.
WebMD reports kale as having 134% of the daily value of Vitamin C, 206% of Vitamin A, and 689% of Vitamin K – it should be called Bodacious K!
Not to be left out, it also has 9% of calcium.
Kale is abundantly filled with antioxidants like carotenoids and flavonoids that fight cancer, and sulphur containing phytonutrients that also help this veggie:
- lower cholesterol
- improve skin
- enhance eye health
- strengthen bones
- reduce the risk of heart disease
